Newbury Salads is planning a return to Buffalo, with a contract underway to take over lobby space vacated in late May by Healthy Scratch at Buffalo General Medical Center.
Paul Tsouflidis, whose Crush Hospitality operates Newbury Salads in Williamsville and previously had sites on Elmwood Avenue and downtown at Expo prior to the pandemic, shared the news June 6 on Facebook.
Tsouflidis earlier this year expanded the Newbury Salads brand further south with a location in Fort Lauderdale. But he wrote in his post the new site in Buff Gen would fulfill a longtime dream.
“This was the hospital I wanted to start this concept in and it’s coming true after some very fortunate meetings with the good people at Pegula Sports + Entertainment,” he wrote. “I have been overwhelmed with the support of the administration of this hospital and its staff. It’s such an exciting time to be able to change the game in hospitals.”
Healthy Scratch, part of Pegula Sports and Entertainment, operated in the space since 2019, offering smoothies, cold-pressed juice, salads, acai bowls and wraps. The company closed the site May 27, along with a location at Roswell Park Comprehensive Cancer Center.
Newbury Salad offers a similar menu, including salads, greens and grain bowls and smoothies.
Kaleida Health confirmed in early May it had begun talks with a vendor to provide healthy options in the space where Healthy Scratch had operated at 100 High St. Officials with the health system Said today that a draft contract has gone out but was not yet finalized.
Tsouflidis is also former owner of Acropolis OPA at 708 Elmwood, which closed during the pandemic and was sold in March.
In his Facebook post, Tsouflidis said he will introduce a digital strategy inside the medical corridor, which will also include delivery of healthy food to neighboring medical buildings.
Adelina Petrik, who runs the Williamsville site at 5429 Main St. with her husband Tyler in partnership with Tsouflidis, said the couple are not involved in new location. Tsouflidis was unavailable for comment.
